FoodTech Fusion: Innovating Flatbreads with Turmeric, Nigella, and Spicy Tomato Salad

by admin477351

A delightful meal that combines warmth and spice can be crafted with creamy chickpeas, a zesty tomato salad, and soft flatbreads made at home. This dish maintains the rustic texture of chickpeas by gently heating them instead of blending, allowing them to pair perfectly with tahini, yogurt, lemon, and aromatic spices. This musabaha with a spicy cherry tomato and coriander salad not only serves as a comforting meal but is also quick to prepare, taking just 15 minutes for both prep and cook time, and is ideal for serving four people.

The preparation begins with the chickpeas. Drain two 400g cans, and simmer them gently in water for about five minutes. After draining, reserve around 300ml of the cooking liquid. Meanwhile, prepare a vibrant salad by combining halved cherry tomatoes, finely diced cucumber, red pepper, chopped coriander, spring onions, a green chilli, and crushed garlic. Season this mixture with lemon juice, white-wine vinegar, olive oil, sumac, dried mint, Aleppo chilli, and a pinch of salt, ensuring everything is mixed thoroughly before setting it aside.

In a saucepan, heat olive oil over medium heat and sauté crushed garlic until lightly golden, then add chopped chilli. Introduce the chickpeas, reserved liquid, ground cumin, tahini, Greek-style yogurt, lemon juice, and salt. Bring this mixture to a boil, then let it simmer for two minutes, stirring occasionally. Once ready, transfer the chickpeas to a shallow dish, drizzle with tahini and olive oil, and top with the spicy tomato salad. A sprinkle of Aleppo chilli adds the final touch before serving with warm flatbreads.

To complement this dish, turmeric and nigella seed flatbreads can be prepared swiftly. Begin by combining Greek yogurt with bicarbonate of soda in a bowl until the mixture bubbles. Add water, both 00 and wholewheat flours, ground turmeric, nigella seeds, and salt, kneading into a soft dough. Divide the dough into eight portions, allowing them to rest briefly under a damp towel. Roll each piece into a round, then cook on a hot grill or pan for one to two minutes per side. Brush the hot flatbreads with ghee or butter to enhance their flavor.

Serve these golden flatbreads alongside the warm musabaha, tearing off pieces to scoop up the chickpeas and fresh tomato salad for a meal that’s simple yet full of flavor. This combination of textures and spices offers a satisfying culinary experience, bringing together the traditional and the contemporary in a single dish.
